Bailey Brewing Co., the Swan Valley's newest brewpub is finally opening to the public on Wednesday, November 4 at 12.30pm!
You can expect a no-fuss menu, with all the pub classics like schnitzel, steak sandwiches, burgers and a healthy-sized pizza menu. Their beer menu is still under construction, but for now they'll be offering a NEIPA with hints of stone fruit, a red ale, pale ale, apple cider and a summer ale, all for a reasonable $10 a pint. Plus, in true brewpub-fashion, you can also opt for a tasting paddle of four beers for just $10.
After home-brewing beers for years, brothers Steven and Daniel Bailey and their father Geoff decided to venture out into the brewpub scene and share their secret recipes with the world. Of course, this came with its challenges, the most significant of which was finding and setting up a venue that met their vision all during the time of COVID-19 lockdown.
After months of searching, the boys came across a property in Middle Swan that caught their eye and upon taking a tour of the property, came across a bunch of interesting old items like antique lamps, maps, tools and beekeeping equipment. The owners at the time said they found it when they had moved in back in 2007 and presumed it was from the owner before them. This pricked the interest of the Bailey brothers, and after a little bit of investigating, they discovered the previous owner was 92-year-old local beekeeper Alton "Toppy" Geer, who was well-known in the Swan Valley after living there for 38 years.
Determined to preserve the legacy of Toppy's bee farm, the Bailey family have utilised the items left behind by Toppy, the most prevalent of which are the old trucks used to create the 850sqm kid's nature playground, complete with a flying fox.
The 9-and-a-half property will feature a massive 245-capacity tavern, outdoor beer garden, a coffee roaster and a brewery with six striking floor-to-ceiling serving tanks filled with 1200L of beer each. If you do the maths, that gives the brewery the capacity to brew 200,000L of beer a year, so I think that'll do us. Check out this video for a little sneak peak if you can't make it down today:
