After an August announcement and original opening date set for November 2025, the long-awaited Baillie Hill hospitality precinct is set to welcome Perth foodies and families this week, opening Monday, January 19.
The heritage-listed Elizabeth Baillie house (historically used as a hospital and psychiatric ward) will act as the centre of the precinct, which will include five new hospitality venues. Community markets and playgrounds are also in the mix, making the new precinct a hub of activity for families throughout the school holidays and beyond.
We’ve broken down everything opening up on Monday below, from gelato to an urban homestead.

Parco’s Pizza
Wood-fired pizzas made with dough from neighbouring cafe and bakery Beth’s (opening date set for March), Parco’s is poised to be a favourite, offering pizzas to enjoy anywhere in the precinct, from the park to the market garden, or as a cheeky takeaway option.
The Berwick Bar and Kitchen
Next door to Parco’s is The Berwick Bar and Kitchen, a stylish new hotspot for pub food, cocktails, live sports, and community. Open from 11am daily, you can enjoy classic pub staples and Parco’s pizzas whether you check in for a casual lunch or drinks with mates.

Greensleeve’s Gelato
What’s a day out without a sweet treat? Greensleeve’s Gelato is there for you when you need a cool-down on hot days, and when you’re trying to convince everyone else at dinner that a post-meal ice cream is in order. The menu will contain both classic flavours and unique creations that make Greensleeve’s a must when visiting Baillie Hill.
Milly’s Acre
Between Parco’s and the precinct’s market garden is Milly’s Acre. This urban homestead is found inside the restored main hall of the Mildred Creek building, offering long lunches and breakfast with heaps of kid-friendly options.

Aside from the venues to explore, there’s a lot more on offer in terms of family entertainment and community engagement.
The nature playground is amazing for the kids, combining with Milly’s Barn (stables where kids can meet-and-greet farm animals) for the ultimate day out.
The Baillie Hill Distillery produces small-batch spirits and liqueurs, infused with the botanicals grown on-site in the market gardens. Look out for the Artist’s Studios set to open, providing creative spaces for workshops and classes, and The Long Hall historic space for functions.
